- Preheat oven to 350°F. Spray 5”x9”x3” loaf pan with cooking spray. In bowl of stand mixer fitted with a paddle attachment, mix together meat, breadcrumbs, salt, eggs, cheese and ½ cup marinara sauce. Mix just until blended.
- Shape into a loaf; place into prepared pan. Arrange slices of pancetta over top, tucking the ends inside the sides of the loaf pan.
- Wrap loaf with parchment paper and sheet of aluminum foil; bake 1 hour. Uncover and continue baking 45 minutes.
- Using a meat thermometer, check that the temperature has registered at least 165°F. Pour off excess fat; allow to cool in pan at least 10 minutes before removing. Cut into 8-10 slices.
- Heat remaining marinara sauce. Serve sliced meatloaf with sauce, pasta and green vegetables. Cool completely before storing in refrigerator or freezer.
