- 1 lb. boneless pork loin, cut into ¾” cubes
- 2 Tbsp. taco seasoning
- 2 tsp. vegetable oil
- 8 oz. chunky salsa
- 1/3 cup peach preserves
- Rice (optional)

Recipe Directions:
- Coat pork cubes with taco seasoning.
- Heat oil in large nonstick skillet over medium-high heat; add pork and cook to brown, stirring occasionally.
- Add salsa and preserves to pan, lower heat, cover and simmer for 15-20 minutes. Serve over rice, if desired.

- 3 lbs. boneless pork loin roast
- 2 tsp. black pepper
- 2 Tbsp. grated Parmesan cheese
- 2 tsp. dried basil
- 2 tsp. dried rosemary
- 2 tsp. dried thyme
- ¼ tsp. garlic powder
- ¼ tsp. salt

Recipe Directions
- Pat pork dry with paper towel.
- In a small bowl, mix all rub ingredients together until well-combined and apply to all surfaces of the roast.
- Place roast in a shallow pan and roast in a 350°F oven for 1 hour (20 minutes per pound), until internal temperature on a meat thermometer reaches 145°F.
- Remove roast from oven; let rest about 10 minutes before slicing to serve.

- 4 porterhouse bone-in loin pork chops, about ¾” thick
- 2 Tbsp. olive oil
- 1½ tsp. ground chipotle chile
- 1½ tsp. coarse salt
- Zest of 1 large orange
- 2 tsp. garlic, minced
- ⅓ cup honey

- 4 porterhouse bone-in loin pork chops, about ¾” thick
- 2 Tbsp. olive oil
- 1½ tsp. ground chipotle chile
- 1½ tsp. coarse salt
- Zest of 1 large orange
- 2 tsp. garlic, minced
- ⅓ cup honey
Recipe Directions
- In a small bowl, stir together oil, ground chipotle, salt, orange zest and garlic into a paste.
- Using a rubber spatula, spread chipotle mixture over both sides of pork. Let stand for 15-30 minutes.
- Heat grill to medium-hot. Place chops on grill and close lid.
- Grill over direct heat, turning once, about 4-5 minutes per side, until the internal temperature of the pork reaches between 145°F (medium-rare) and 160°F (medium) on a meat thermometer.
- During the last 2 minutes, brush chops on both sides with honey.
- Remove from grill and let rest for 3 minutes.
