Gluten-free Peanut Butter Blondies

These gluten-free blondies are light and moist, while also being sweet and salty, making them a great dessert for friends who are gluten-free.

  • 3⁄4 cup creamy peanut butter
  • 1⁄2 cup brown sugar
  • 1⁄4 cup sugar
  • 1⁄4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 cup gluten-free all-purpose flour blend with xanthan gum
  • 1 1⁄2 tsp. baking powder
  • 1⁄2 tsp. salt
  • 3⁄4 cup semisweet chocolate chips


  • Preheat oven to 350°F. Prepare a 9”x9” baking pan with nonstick cooking spray.
  • In a large bowl, combine peanut butter, brown sugar, sugar and applesauce. Beat in eggs and vanilla until combined.
  • Stir in flour, baking powder and salt, then fold in chocolate chips. Spread into prepared pan.
  • Bake 20-25 minutes, until a toothpick inserted in the center comes out clean.
  • Serve.
