Organic Ham and Cheese Omelet Paninis

For a breakfast the whole family can enjoy, these paninis make omelets easy to take on the go.

  • 4 slices organic bread
  • 2 tbsp. organic mayonnaise
  • 4 large organic eggs
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. organic pepper
  • 1⁄2 cup organic ham, diced
  • 4 slices organic cheddar cheese, divided
  • 1⁄4 cup organic baby spinach


  • Place the bread on a work surface and spread mayonnaise on one side of each piece. Set aside.
  • In a small bowl, whisk eggs, salt and pepper together. Heat an 8" nonstick skillet over medium heat and prepare with nonstick cooking spray. Pour about half the eggs into the skillet and cook until the edges are set but the top is still wet. Top with half the ham, 1 slice of cheese and a few spinach leaves.
  • Cook 1-2 minutes, then fold in half and flip directly onto a piece of bread (non-mayonnaise side). Top with a slice of cheese and another piece of bread, mayonnaise side on the outside. Set aside and repeat omelet step with remaining ingredients.
  • Heat a panini press or use the skillet at medium heat. Place the paninis into the pan or press and cook about 3 minutes, until golden and toasted.
  • Serve and refrigerate leftovers.
